Dakota Bread - Bread Machine Version
Ingredients
1/2 cup water
2 tablespoons sunflower oil
1 egg, beaten
1/2 cup cottage Cheese
1/4 cup honey
2 cups bread flour
1/2 cup whole wheat flour
1/4 cup wheat germ
1/4 cup rye flour
1/4 cup rolled oats, quick cooking
1 teaspoon salt
1 tablespoon wheat gluten
1 1/4 teaspoon active dry yeast
1/4 cup sunflower seeds, roasted, unsalted (optional)
Directions
Place ingredients in pan in the order recommended by the bread machine manual. Do not use the delayed time bake cycle for this recipe.
Breakfast Manicotti With Hollandaise Sauce
Ingredients
8 ounces manicotti
12 ounces hot breakfast sausage (such as Jimmie Dean)
½ cup chopped red bell pepper
½ cup chopped fresh mushrooms
4 eggs, slightly beaten
¼ cup seasoned dry bread crumbs
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
1/3 cup minced onion
½ teaspoon salt
½ teaspoon pepper
Hollandaise Sauce:
6 egg yolks
1/8 teaspoon salt
1/8 teaspoon white pepper
2 tablespoons plus 2 teaspoons lemon juice
1 cup soft butter, divided
Directions
Cook pasta according to package directions. Drain and cool on foil.
In large skillet brown sausage. Add bell pepper and mushrooms. Mix and fry 2 minutes. Drain. Add eggs, bread crumbs, cheeses, onion, salt and pepper.
Fill each manicotti with about 1/4 cup of meat mixture and place in 9x13-inch pan coated with nonstick spray.
Cover and bake 20 minutes in 350-degree oven. Remove from oven. Drizzle Hollandaise sauce over manicotti.
Hollandaise sauce: In top of double boiler, slightly beat egg yolks. (During cooking, water in double boiler should remain hot but not boiling.) Add salt, pepper, lemon juice and ½ cup butter. Blend well with wire whisk. When butter is melted, add remaining butter 1 tablespoon at a time beating after each addition. The mixture will get very smooth and thick. Remove from heat and use immediately. To keep mixture warm, leave in double boiler but remove pan from heat.
Makes 7 servings of 2 manicotti each.
Easy Oatmeal Bread - Whole Wheat
Ingredients
2 cups rolled oats
3 cups boiling water
½ cup molasses
2 packages active dry yeast
3 ¼ to 3 ¾ cups bread flour
2 cups whole wheat flour
1 tablespoon salt
Directions
Makes 4 small loves or 2 medium loaves.
In large bowl add water to oats. Cool to 120 to 130 degrees. Stir in molasses and yeast. Add 2 cups bread flour; mix thoroughly by hand or with dough hook. Mix in whole wheat flour, salt and enough bread flour to make a soft dough. Cover; let rest 10 minutes. Knead with dough hook or turn dough onto floured surface; knead 10 minutes or until dough is smooth and elastic.
Form into 4 loaves* and place in 7½x3½ x2-inch pans coated with non-stick spray. Let rise 1 hour or until doubled. Bake in preheated 450-degree oven 10 minutes; reduce heat to 350 degrees and bake 20 to 25 minutes, or until loaf sounds hollow when tapped with fingers. Tent with foil during last 15 minutes to prevent over browning. Remove from pan to cooling rack.
*Or form into 2 loaves and place in 9x5x2½-inch pans. Bake an additional 10 minutes at 350-degrees.
Whole Wheat Pasta with Chicken
Ingredients
Makes six 2-cup servings.
12 ounces penne whole wheat pasta, or similar shape
12 ounces skinless chicken breasts, cut in ¾-inch cubes
2 tablespoons olive oil, divided
1 red or green bell pepper, cut in ¾-inch pieces
¾ cup chopped onion
1 tablespoon chopped garlic
8 ounces fresh mushrooms, sliced
1 cup frozen peas, slightly thawed
16-ounce jar Alfredo pasta sauce
2 tomatoes, cut in wedges
Salt and pepper to taste
Fresh grated Parmesan cheese, optional
Directions
Cook pasta according to package; drain.
In medium saucepan on medium-high heat, brown chicken in 1 tablespoon oil until no longer pink in middle. Remove chicken from pan and set aside leaving remaining oil in pan. Add bell pepper, sauté 2 minutes; add onion and garlic, sauté until onion is clear, about 2 minutes; add to chicken.
Add 1 tablespoon oil to saucepan and sauté mushrooms until just wilted. Return chicken and vegetables to pan. Add peas and pasta sauce. Bring to a boil. Add tomatoes and heat 1 minute. Serve with Parmesan cheese.
Cracked Wheat Bread
Ingredients
1-POUND LOAF
3/4 cup + 2 tablespoons water
1/2 cup cracked wheat
1 tablespoon + 1 teaspoon margarine
1 tablespoon + 1 teaspoon honey
2 1/4 cups bread flour
1 teaspoon salt
1 1/2 teaspoons active dry yeast
1-1/2 POUND LOAF
1 1/4 cup + 1 tablespoon water
3/4 cup cracked wheat
2 tablespoons margarine
2 tablespoons honey
3 cups bread flour
1 1/2 teaspoon salt
2 1/4 teaspoons active dry yeast
2-POUND LOAF
1 3/4 cups water
1 cup cracked wheat
2 tablespoons + 2 teaspoons margarine
3 tablespoons honey
4 cups bread flour
2 teaspoons salt
1 tablespoon active dry yeast
Directions
Bring water to a boil. In a small bowl, pour water over cracked wheat and let cool until 80 degrees. Proceed according to the directions in your manual for adding remaining ingredients.
Whole Wheat Sugar Cookies
Ingredients
1 cup sugar
1/2 cup butter
1 egg
2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
3 tablespoons milk
1 teaspoon vanilla
1 tablespoon orange peel, grated
Topping:
2 tablespoons sugar
1/2 teaspoon cinnamon
Directions
Cream sugar and butter; add egg. Mix flour, baking powder, soda, salt and nutmeg together. Then add to creamed mixture along with milk and vanilla. Stir in orange peel. Blend well. Shape into 1 inch balls and place on greased cookie sheet 2 inches apart. Flatten slightly with glass dipped in cinnamon-sugar mixture. Bake 8-10 minutes in 375 degree oven or until golden brown. Remove immediately to cooling rack.
Makes 54.
