Apricot & Almond Couscous Dessert

1 1/2 cups water, divided
2 tablespoons butter or margarine, divided
1/2 teaspoon salt
1/2 cup couscous
3/4 cup slivered almonds
1 cup chopped pitted dates
1/2 cup chopped dried apricots
Whipped cream

In a saucepan, bring 3/4 cup water, 1/2 tablespoon butter and 1/2 teaspoon salt to a boil. Stir in couscous; remove from heat, cover and let stand 5 minutes.

In a large skillet over medium heat, melt the remaining 1 1/2 tablespoons butter. Add almonds and stir until lightly browned.

Slowly add remaining 3/4 cup water, dates and apricots; simmer over low heat until most of the liquid is absorbed (about 5 minutes). Fluff couscous with a fork and add to fruit mixture; toss lightly to mix. Serve topped with whipped cream. Makes four 1/2-cup servings.
