Cherry Almond Cookies


Ingredients
1/2 cup softened butter
1/3 cup oil
1/2 cup white sugar
1/2 cup brown sugar, lightly packed
1 egg white
1 1/2 teaspoons vanilla
1 3/4 cups all purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2teaspoon cream of tartar
3/4 cup crisp rice cereal (or any crisp cereal)
3/4 cup rolled oats
3/4 cup dried cherries (or cranberries)
1/4 cup finely chopped almonds

Instructions
With an electric mixer, cream together butter, oil, white sugar and brown sugar. Add egg white and vanilla; beat until well mixed. In small bowl mix flour, salt, baking soda and cream of tartar and stir into butter mixture. Gently stir in cereal, oats, cherries and nuts.

Drop by heaping teaspoonfuls onto an ungreased cookie sheet. Bake in preheated 375 oven for 8 to 10 minutes until lightly browned.
