Carrot Raisin Bars

1/4 cup margarine
1 cup white sugar
1 cup brown sugar
3/4 cup applesauce
3 eggs
1/3 cup orange juice
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
3 cups grated raw carrots
3/4 cup raisins

3 - 4 tablespoons orange juice
1 teaspoon margarine
2 cups powdered sugar

In a large bowl with electric mixer, cream together margarine and white sugar. Add brown sugar, applesauce, eggs and orange juice; mix thoroughly. Sift or stir together flour, soda, baking powder, salt and cinnamon; add to egg mixture and stir until well mixed. Stir in carrots and raisins. Pour into a 10 1/2 x 15-inch pan coated with non-stick spray. Bake 20 to 25 minutes at 350 degrees. Cool.

Warm 3 tablespoons orange juice with margarine until melted. Mix with powdered sugar, adding additional orange juice as needed to make a glaze that can be thinly spread over bars.
