Apple Bars


Ingredients
2 eggs
Milk
2 1/2 cups flour
1/2 plus 1/4 teaspoon salt
2 cups plus 2 tablespoons sugar
1 cup shortening
1 cup crushed corn flakes or wheat cereal
6 to 8 apples, peeled and sliced thin
1 tablespoon cinnamon
1 teaspoon lemon juice

Instructions
Separate eggs. Beat egg whites until stiff. Set aside. In glass measuring cup, beat yolk with a fork; add milk to make 2/3 cup.

In a medium bowl, measure flour, 1/2 teaspoon salt and 2 tablespoons sugar; stir to mix. Add shortening. With pastry blender or 2 forks, mix until crumbly. Add egg and milk mixture and stir until blended. On floured surface, roll out 1/2 of the dough (about 11 x 15 inches or to fit pan). Place in bottom of pan. Cover other portion of dough.

Sprinkle corn flakes over crust.

Mix apple slices, 1 cup sugar, 1/8 teaspoon salt, cinnamon and lemon. Spread on top of corn flakes. Roll out other half of crust and place over apple mixture. Spread egg whites over crust.

Bake at 325 degrees for 60 minutes. Glaze with a thin powdered sugar frosting.
