English Lemon Cookies


Ingredients
3/4 cup granulated sugar
1/4 cup non-fat vanilla or plain yogurt
1 egg or egg substitute
2 1/2 tablespoons cooking oil
1/4 teaspoon finely grated lemon peel
1/2 teaspoon fresh lemon juice
1 1/2 cups cake flour*
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt

Instructions
*For all purpose flour use only 1 cup plus 5 tablespoons.

In large bowl combine sugar, yogurt, egg, oil, lemon peel and lemon juice; stir until well blended. In small bowl, stir together flour, baking soda, baking powder and salt. Add to egg mixture; stir until well blended.

Spray cookie sheets with non-stick cooking spray. Drop by rounded teaspoons 2 inches apart onto cookie sheets. Bake at 375 degrees for 9 to 12 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets to wire cooling racks and cool completely.

Makes 18 cookies.
