Chocolate Coconut Drops

2 cups all-purpose flour
1/2 cup unsweetened cocoa
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons margarine
2/3 cup sugar
2 tablespoons light corn syrup
1/4 cup skim milk
1 egg
1 egg white
1 1/2 teaspoon vanilla extract
3/4 cup mint-chocolate chips, divided
1/3 cup coconut (optional)

Combine flour, cocoa, soda and salt; set aside.

In a large bowl, cream margarine, sugar and corn syrup until well mixed. Add milk, eggs and vanilla, beating well. Stir in 1/2 cup chocolate chips and coconut.

Drop by tablespoons onto baking sheets coated with non-stick spray. Bake at 325 F for 10 minutes; cool 1 minute and remove from baking sheet to wire rack.

Pour 1/4 cup chips into corner of small plastic bag with zip closure. Hold in very hot water until chips melt. Cut the tip from corner of bag; squeeze bag, drizzling chocolate over each cookie.

Makes 36 cookies.
