Spaghetti Pancakes 2

1/2 pound spaghetti, cooked and cooled
2 eggs, beaten
1/3 - 1/2 cup freshly grated Parmesan cheese
Salt and freshly ground black pepper to taste
3 tablespoons unsalted butter

In a mixing bowl combine the spaghetti, eggs, cheese, salt and pepper.

In a 10-inch skillet heat 2 tablespoons of the butter until it starts to foam. Then add the spaghetti mixture and press down with a spatula to form a compact cake.

Sauté over medium heat for about 10 minutes or until bottom is nicely browned. Dot top with remaining butter, cut into bits. Cover pan with a serving dish and invert pancake onto dish. Then slide pancake back into pan, browned side up. Cook until underside is brown. Slide out onto the serving dish. Cut into wedges and serve hot with sausages.

Makes 4 servings.
