Zesty Couscous Salad
1 2/3 cup (14-ounce can) chicken broth
1 cup couscous, uncooked
1/2 cup drained, canned garbanzo beans
1/2 cup seeded, chopped unpeeled cucumber
1/4 cup diced red pepper
2 tablespoons chopped green onions
1/4 cup zesty Italian dressing
In a medium saucepan, bring broth to a boil; stir in couscous. Remove from heat, cover, and let stand for 5 minutes. Fluff with a fork; let cool for 10 minutes. In a large bowl, lightly toss couscous with garbanzo beans, cucumber, red pepper and onions. Add dressing and toss.
