Chicken & Broccoli Stir-Fry

8 ounces medium shells
1 1/2 tablespoons oil
2 teaspoons crushed garlic
12 ounces raw chicken breasts, cubed
2/3 cup chicken broth
1 medium head broccoli florets or a 10-ounce package frozen
1/2 teaspoon salt
1/8 teaspoon pepper
2 small tomatoes, diced

Cook pasta according to package directions until al dente. Drain and set aside.

Heat oil in a large fry pan. Add garlic and chicken; sauté just until chicken is still slightly undercooked. Add chicken broth and broccoli, cover and cook 5 minutes or until broccoli is tender yet crisp. Add salt, pepper, pasta and tomatoes. Cook 1 to 2 minutes until pasta and tomatoes are heated through. Serves 4-6.
