Brunch Casserole

7 ounces elbow macaroni
12 ounces pork sausage (such as Jimmy Dean)
cup green bell pepper, optional
cup onions, optional
5 eggs
3 cups shredded cheddar cheese
cup milk
cup half and half
1/8 teaspoon pepper
teaspoon salt
cup bread crumbs

Cook pasta according to package directions. Drain.

In skillet over medium-high heat, cook sausage until brown and no longer pink; drain. Add pepper and onion; cook about 2 minutes.

In large bowl beat eggs. Add macaroni, sausage, milk, half and half, pepper, salt, bell pepper and onion. Pour into buttered 9x13-inch pan. Sprinkle with bread crumbs.

Bake in preheated 400-degree oven 15 minutes. Lower heat to 275 degrees; bake 15 minutes. Let stand 5 minutes before cutting into squares. Serve with sliced tomatoes.

Makes 8 servings.
