Taco Pasta Casserole

8 ounces rotini pasta
1 pound ground beef
2 cloves garlic, minced
1 1/4-ounce package taco seasoning
15-ounce can tomato sauce
1/3 cup diced red pepper
1 teaspoon dried oregano
2/3 cup whole kernel corn
2 tablespoons water
1 cup shredded cojack cheese, divided
1/2 cup reduced fat sour cream

Cook pasta according to package directions; drain.

In a large non-stick skillet, brown ground beef and garlic; drain thoroughly. Stir in taco seasoning, tomato sauce, red pepper, oregano, corn and water. Bring to a boil and simmer 5 minutes.

Combine pasta, 1/2 cup cheese and sour cream. Spoon into a 2-quart baking dish coated with non-stick spray. Top with meat mixture and remaining cheese. Bake uncovered at 350 degrees for 30 minutes.

Makes 6 servings.
