Sunburst Stir-Fry

1 large sweet red pepper, cut in pieces
2 tablespoons cooking oil
1 onion, cut into wedges
2 cloves garlic, minced
1 small yellow squash, cut into bite-size pieces
1 pound boneless beef sirloin steak, trimmed and cut into thin, bite-size pieces
1/2 teaspoon black pepper
2 tablespoons soy sauce
1/2 - 1 teaspoon crushed red pepper
8 ounces thin egg noodles

In a blender container, blend sweet pepper until ground. In large skillet, heat 1 tablespoon oil. Stir-fry onion and garlic 2 minutes. Add squash; stir-fry 1 to 2 minutes. Remove from skillet.

Add remaining oil. Stir-fry beef, half at a time for 2 to 3 minutes or until no longer pink; return all beef to skillet.

Combine soy sauce, crushed red pepper and black pepper. Add to skillet along with squash mixture and sweet red pepper. Heat through. Serve over cooked egg noodles or similar pasta.

Serves 4.
