Noodle, Broccoli, Cheese Soup

2 tablespoons butter
1/2 cup chopped onion
1 clove garlic, minced
4 cups chicken broth
6 ounces fine or thin noodles, made from 100% durum
1 package (16 ounce) frozen broccoli, partially thawed
4 cups milk
12 ounces grated cheese, American and/or cheddar
Dash of salt and white or black pepper
Croutons and parsley sprigs, optional

In large kettle, saute onions and garlic in butter. Add broth and bring to a boil. Cook noodles in broth until almost tender. Add broccoli and milk. Heat thoroughly but do not boil. Add grated cheese and heat until it melts. Serve immediately. Garnish with croutons and sprigs of fresh parsley. 8 Servings
