Bacon-Ham Chowder
Marlys Scherbenske, Lehr, ND

1 cup radiatore or other small pasta shape
1/2 pound bacon
4 chicken bouillon cubes
2 cups water
5 small potatoes, cubed (about 5 cups)
1 bunch green onions, chopped
1 cup sliced carrots
4 cups whole milk
1/2 cup flour
1 1/2 cups cubed, cooked ham
1 tablespoon hot pepper sauce
Cracked black pepper, to taste
1 cup shredded Cheddar cheese

Cook pasta according to package directions until tender but firm; do not overcook.

Cook bacon until crisp and set aside. When cool, crumble into bite-size pieces. Combine bouillon and water in large pan; heat to boiling. Add potatoes; cover and simmer 5 minutes.

Add onions and carrots and simmer until vegetables are tender, about 10-12 minutes. Whisk milk and flour together; add to vegetables. Cook over medium heat, stirring frequently until bubbly and thickened. Add ham, bacon, pepper sauce, cracked pepper, pasta and cheese and heat until cheese is melted.
