Wheat Berry Salad with Feta

Makes six 1-cup servings.

1 cup wheat berries
1 teaspoon salt
6 cups cold water
cup diced or crumbled Feta cheese
cup chopped red onion
cup chopped, pared and seeded cucumber
cup chopped bell pepper, red, yellow or green
1 clove garlic, minced
2 tablespoons minced fresh parsley or 1 tablespoon dry
3 tablespoons chopped calamata olives
1 cup halved cherry tomatoes
cup olive oil
2 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
to 1 teaspoon ground cumin
Dried hot red pepper flakes, to taste
Salt and pepper, to taste

In medium size saucepan, combine berries with salt and water. Bring to a boil, reduce heat and simmer uncovered, about 1 hour or until tender. Drain thoroughly. In a large bowl, gently mix wheat with the rest of the ingredients. Garnish with additional parsley and cherry tomatoes. Salad may be refrigerated, but bring to room temperature before serving.
