|Recipe courtesy North Dakota Wheat Commission|
|2 cups warm water
½ cup shortening
6-6½ cups of bread flour (divided)
½ cup sugar
½ cup nonfat dry milk
2 packages active dry yeast
1 tablespoon salt
2 eggs, slightly beaten
|Heat water and shortening to 120 to 130 degrees.
In large bowl measure 2 cups flour, sugar, nonfat dry milk, yeast and salt. Add water and shortening; beat 2 minutes. Add ½ cup flour and eggs; beat 1 minute. Stir in additional flour until a soft dough is formed.
Place on a lightly floured surface; divide into portions for shaping. (Dough will shape easier if you let it rest a few minutes before shaping.) Shape dough into rolls. Grease surface of dough with melted shortening or oil and cover lightly. Let dough rise until very light. (The imprint of your finger should remain when the dough is touched gently on the side.)
Bake at 400°F., for 12-15 minutes until golden brown. Makes 2 dozen medium size rolls.
