|Grandma's Potato Biscuits|

|1 cup skim milk
3 tablespoons shortening
4 - 4 1/2 cups all purpose flour
1 tablespoon sugar
1 1/2 teaspoons salt
2 1/4 teaspoons active dry yeast
1 cup mashed potatoes
|Heat milk and shortening to 120 degrees F. Blend flour, yeast, sugar and salt. Combine with milk mixture, potatoes and eggs; mix. Knead with dough hook until dough leaves side of bowl, 8 - 10 minutes. Cover and refrigerate at least 2 hours.
Roll dough to 1/2-inch thickness. Cut with 2 1/2-inch cutter and place on pans coated with nonstick spray. Let rise until doubled. Bake at 400 degrees F. 11 - 13 minutes.
