Light And Cheesy Drop Biscuit

Ingredients
2 cups all purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
1/4 teaspoon baking soda
2 1/2 tablespoons shortening
1 cup buttermilk
1/4 cup finely shredded cheddar cheese
1 1/2 teaspoons dried parsley, optional


Instructions
Combine dry ingredients. Cut in shortening. Add buttermilk, cheese and parsley. Stir until flour is just moist. Drop by heaping tablespoons onto pan coated with nonstick spray. Bake at 400 degrees F. 12-15 minutes. Makes 15 biscuits.
