Cantaloupe Marmalade

1 medium seedless orange, quartered
1 cup peeled cantaloupe (about 1/4 small cantaloupe)
1 cup peeled, diced Rome or Golden Delicious apple
1 cup sugar

Pulverize the orange in a food processor* and then add the cantaloupe and apple. Process until fruit is finely chopped. Put fruit mixture into a medium saucepan and stir in sugar. Bring to a simmer over medium heat. Cook, stirring occasionally, until thick and shiny, about 10 minutes. (Can be cooked in the microwave, stir occasionally.)

Let cool to room temperature before serving. Will keep for up to a week, tightly covered and refrigerated.

*If food processor is not available, dice fruit, add sugar and cook 30-40 minutes or until thickened.
