Pumpkin Oat Muffins

1 cup all-purpose flour
cup packed brown sugar
2 teaspoons baking powder
1 teaspoon pumpkin pie spice
teaspoon salt
teaspoon baking soda
cup canned pumpkin
1 egg, slightly beaten
cup 1% milk
3 tablespoons oil
1 cup rolled oats

Topping (optional):
1 tablespoon margarine
1/3 cup packed brown sugar
1 tablespoon flour
teaspoon pumpkin pie spice

Combine flour, sugar, baking powder, pie spice, salt and soda; mix well. Combine pumpkin, egg, milk and oil; add to dry ingredients. Mix only until ingredients are combined. Stir in oats. Fill muffin pans.

Melt margarine; add brown sugar, flour and pumpkin pie spice. Mix; the mixture will be crumbly. Sprinkle over muffin mixture. Bake in pre-heated 425 degree-oven 18 to 20 minutes or until wooden pick inserted near center comes out clean.
