Yogurt Orange Bread

1/2 cup margarine
1 1/2 cups sugar
2 eggs
1/2 cup plain lowfat yogurt
4 teaspoons grated orange rind
1/2 cup orange juice
2 1/4 cups sifted flour
1/2 teaspoon baking powder
1/2 teaspoon salt

Cream together margarine and sugar; add eggs, yogurt, orange rind and juice, beating until smooth. Mix in flour, baking powder and salt.

Pour batter into a 9 x 5 x 3 inch loaf pan coated with non-stick spray. Bake at 350 degrees for one hour or until center springs back when lightly touched. Cool in pan on wire rack for 10 minutes, then remove from pan. (Three small loaves may be made by using three 6-inch pans.)
