|Lemon Bread - Reduced Fat|

|1/3 cup margarine
2 teaspoons lemon rind
1 1/4 cup sugar, divided
1 1/2 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon baking powder
1/2 cup milk
2 to 3 tablespoons lemon juice
|Cream together margarine, lemon and 3/4 cup sugar. Add eggs and beat. Sift together flour, salt and baking powder. Mix flour into batter alternately with milk, beginning and ending with the flour.
Pour into 4 x 8 inch loaf pan coated with non-stick spray. Bake at 325 degrees for 50-60 minutes. Mix lemon juice and 1/2 cup sugar thoroughly. Pour over bread while still hot. Let set in pan 5-10 minutes. Remove from pan and cool on cooling rack.
