Bread Sticks

Ingredients
1 package active dry yeast
2/3 cup warm water (110-115 degrees F)
1 tablespoon sugar
1/2 teaspoon salt
2 tablespoons oil
2 - 2 1/4 cup bread flour, divided
1 egg white
1 tablespoon water
Sesame or poppy seed or coarse salt

Instructions
Dissolve yeast in warm water. Add sugar, salt, oil and one cup flour.
Beat until smooth with a dough hook or wooden spoon. Add rest
of flour as needed and knead until smooth and elastic (about 5 minutes); cover
and let rest 5 minutes.

Divide dough into 16 portions. Roll each
portion into pencil-like rope, 8 inches long. If dough is difficult to roll,
cover and let rest 5-10 minutes to allow dough to relax. Place 1
inch apart on baking sheet coated with vegetable spray. Cover; let proof 20
minutes. Combine egg white and water. Brush mixture over sticks and sprinkle
with sesame seeds, poppy seeds or coarse salt. Bake at 400degrees F for
15 minutes. Makes 16 bread sticks.
