Lemon Bread

Ingredients
1/2 cup margarine
2 teaspoons lemon rind
2 cups sugar, divided
2 eggs
1 1/2 cups flour
1/4 teaspoon salt
1 teaspoon baking powder
1/2 cup milk
2 to 3 tablespoons lemon juice

Instructions
Cream together margarine, lemon and 1 1/2 cup sugar. Add eggs and
beat. Sift together flour, salt and baking powder. Mix flour into batter
alternately with milk, beginning and ending with the flour.

Pour into 4 x
8-inch loaf pan which has been coated with non-stick spray. Bake at 325
degrees F for 50-60 minutes. Mix lemon juice and 1/2 cup sugar thoroughly.
Pour over bread while still hot. Let set in pan 5-10 minutes.
Remove from pan and cool on cooling rack.
