Banana Bread

1/2 cup margarine
1 1/4 cup white sugar
2 eggs
1 cup sour cream
1 cup mashed ripe bananas (over-ripe is best)
1 teaspoon baking soda
2 cups all-purpose flour
1/4 cup mini chocolate chips or chopped nuts, optional

In large bowl with an electric mixer, cream margarine and white
sugar. Add eggs and beat until blended. Add sour cream and
bananas; blend. Mix soda with flour and add to mixture. Beat
on low setting until just mixed. Stir in chocolate chips.

Pour into a 9 x 4 x 4-inch loaf pan
coated with non-stick spray and lightly floured. Bake
at 350 degrees for 50 to 60 minutes or until done
on top. Let stand in pan about 5 minutes. Remove from
pan and cool on cooling rack.
