Kernel Characteristics

Quality products begin with quality ingredients. For bread and pasta, the principal raw ingredient goes back to the wheat kernels. Samples of hard red spring and durum wheat are run through a gamut of tests and assigned many ratings upon delivery at a country elevator. The basic criteria used to determine wheat's initial value in the marketing system include dockage, protein, grade, subclass and moisture.
